Elaboration
This vintage we started harvesting a little bit earlier than normal (mid August) but with a high maturation index and an unbeatable sanity. After a short cold cleansing it started fermenting in new French oak barrels. There it also made the malolactic fermentation and aging with lees in the same barrels with their corresponding “batonage”. It remained a total of 4 months in barrels.

It was bottled on 24 February 2010.

Brief remarks on wine tasting
Probably a little bit more balanced but like every year, it is a wine with great structure and a lot of personality. Its highlights are notes of very mature tropical fruit, as pineapple, papaya, banana, etc., some citric smells together with some slight toasted nuances due to its elaboration in barrel. All these present notes are blended elegantly with some lactic nuances, characteristic of this complex elaboration, which give him a great and pleasant structure and creamy. During its evolution in bottle it will unroll all these toasted notes, creamy, candy and lactic touches. Day by day it will be more long and persistent in nose as in mouth. Their characteristics predict a good evolution in bottle. Ideal with cheeses, especially of goat, sauced fish or grilled, shellfish, foie, dried fruits, etc.
