Aigua de Llum, a collection which is not intended to be highly exploited commercially, but rather reserved for the friends of the Celler or passionate specialty collectors and only to be released for those vintages which Vall Llach deems exceptional. This bottle was dedicated to the poet Miquel Martí i Pol for his intimate relationship with Celler Vall Llach and, in his memory, the name of the wine is “Aigua de Llum”, an excerpt from his poem entitled "Solstici".

Enric Costa wanted to plant in one of the wildest and most magical areas of his terrains-2000 vines of a variety which enchanted him: Viognier. After a patient wait of no less than six years, the same vines that once had a fragile, almost sickly aspect, finally gave their first grape. The entire team at the Celler was taken by surprise not only by the quality of the grapes once treated, but also by the originality of the flavours and aromas that they gave us as well. It was fate who decided that when the Celler believed that moment had arrived in which to show these results, the Celler Vall Llach foundation had just happened to reach 10 years. Therefore, it was decided that this Viognier would be used to celebrate the tenth anniversary, giving way to the birth of Aigua de Llum. This is a collection which is not intended to be highly exploited commercially, but rather reserved for the friends of the Celler or passionate specialty collectors and only to be released for those vintages which the Celler deems exceptional. Vintage
2008, year of the deluge! After a really dry winter came a damp and constant east wind, which lasted from March to mid-July. This east wind was damp and often brought with it abundant rain ... it is years since the rain was this generous in spring and the first months of summer. Vegetation was spectacular, and grape setting was affected by excessive precipitation, which led to a major reduction in flowering. So, a year when the sanitary condition of the plants had to be continuously monitored, due to a significant presence of mildew and oïdium. Even though in this part of the world we are not used to rain, hard work and dedication led to favourable results. Unlike in normal years, the plants formed copious vegetation, and due to the lack of grapes caused during setting, their development was more abundant than is usual. This was a perfect year for vegetation and for allowing plants to rest. Late August and September were more typical - large contrasts between day- and nighttime temperatures encouraged the formation of hard skins, and the berries did not grow excessively. Late September and October were dry, and harvesting was normal, with well-coloured, mature grapes. A complex, aromatic year.

Alcohol content: 15,85%
Total tartaric acidity: 4,8 gr/l

Vinification
Destalking of the grape and pre-fermentation maceration in stainless steel tanks for 36 hours within set temperature limits.
50% of the Viognier is fermented in a 300 litre oak barrique. The rest of the Viognier is fermented in stainless steel tanks, as is also the case with the other whites.
Fermentation for 25-60 days at temperatures limited to between 12 and 15 ºC with daily batonnage.
        
Ageing
The wine was transferred to the same 300 litre barriques of new French oak used for fermentation. The other whites were transferred to 225 litre barriques of new French oak.
The wine was kept in barriques during the ageing process of 4 months.
